  This month's recipe, from the kitchen of the Beijing Novotel Xinqiao Hotel, promises to satisfy your sweet tooth - and your appetite.

  350g chicken breast
  1 cup lemon juice
  6 tbsp white granulated sugar
  1 cup starch
  2 eggs
  salt

  Wash the chicken breasts and cut them into large filets. Rub the chicken with a small amount of salt. Dip the filets in the yolk of two eggs and coat them in the starch. Pre-heat the oil in a wok until hot. Place the filets in the oil and deep-fry until golden yellow. Take the filets out and score them once lengthwise. Turn the filets over and score the other side 4 or 5 times across their width. Set aside. Boil the lemon juice in a wok and dissolve in granulated sugar. Add 1 cup of water and three tablespoons of starch to thicken the mixture. When the starch has completely dissolved, pour the sauce onto the filets. Serves two.  中华民俗节庆网
